I have a fear called "Play-Doh-smashed-in-the-carpet-tosis" and have not let the stuff in our house. BUT on the odd occasion that Asher sees some and gets curious, all I have to do is open the jar and let him smell it or touch it. He's not a fan when he realizes that playing with it means TOUCHING it. Personally, I love the smell of play-doh but am happy we have a win-win situation on our hands thus far.
Well, I have to admit, we only have about 3 square feet of carpet to worry about. If we had more... I'd probably be a bit more worried about the stuff!

Aven LOVES Play-Doh. She mostly likes to tell me which animal to sculpt so that she can smash it.
